Don’t be all weirded out about lemon flavored stuff. You’re missing out. It’s not all Lemon Pledge flavored Jolly Ranchers or sour stuff. This cupcake turned out to be a very sweet, very cakey, light and fluffy lemon sugar experience. It was nice.
Get this stuff:
3 cups self-rising flour (SELF-RISING, OKAY?)
1/2 teaspoon salt
1 cup unsalted butter, at room temperature
2 cups white sugar
4 eggs, at room temperature
1 teaspoon vanilla extract
2 tablespoons lemon zest (if you don’t have a zester, DO NOT do that thing where you peel off strips of lemon and chop them up: it doesn’t work and it’s gross)
1 cup whole milk
2 1/2 tablespoons fresh lemon juice
Preheat oven to 375. Line the cupcake pan cups with paper liners.
Sift the self-rising flour and salt together in a bowl. In another bowl, beat the butter and sugar with a mixer until it’s light and fluffy like a baby chick. Beat in the eggs one at a time, be sure the previous egg is mixed in all the way before adding another egg. OR ELSE. Mix in the vanilla extract and lemon zest.
Gently beat the flour mixture into the butter mixture, one third at a time. After adding the first flour portion, add about half of the milk and half of the lemon juice. Mix together really well. Add the next flour portion, and add the rest of the milk and lemon juice. When that’s mixed nicely, put in the last bit of flour. As soon as that’s combined, stop mixing. STOP IT YOU’RE GOING TO RUIN CHRISTMAS
Fill cupcake liners with batter 3/4 full, and bake for about 17 minutes or until something nice and sharp (like one of those corn on the cob holders that looks like a piece of corn with vampire teeth) comes out clean. Let the cupcakes cool in the pans for about 10 minutes and then cool them the rest of the way out of the pan.
I topped these with strawberry frosting, but I think they’d be good with cream cheese buttercream, vanilla buttercream, or something like that. Chocolate, not so much…also, it was originally recommended that I put lemon frosting on them, but just because I made a lemon cupcake doesn’t mean I want to make everything out of lemon.
